Basil Dressing for Salads
Yields 1-¼ cup. I prefer Organics.

¼ Cup Fresh Baby Spinach Leaves, washed and spun dry
¼ Cup Fresh Basil Leaves, washed and spun dry
½ Cup Fresh Buttermilk
Juice from 1/2 Fresh Lemon
1/2-3/4 Cup Olive Oil, or blend, to preference
Fresh Ground Black Pepper

Whirl first four ingredients in a blender until liquefied. With blender running, add oil in a thin stream until emulsified. Season to taste with pepper.

Lightly dress your choice of fresh mixed greens and vegetables. Serve gently tossed.

This dressing is also good on pasta salad: To cooked and cooled penne or fusilli pasta, you might add chopped red pepper, zucchini, grape tomatoes, cucumber, ricotta salata cheese, a few chopped olives, radish, and scallion, some torn pieces of fresh basil, along with a small amount of dressing.


Fresh Crepes with Pineapple
Or, good too with greens or scrambled eggs and cheese.

8 Not-too-Floury Crepes
5 Fresh Large Organic Eggs
2 Tablespoons Milk, 1% MilkFat
3-5 Tablespoons Flour of your choice
Less than 1 teaspoon clarified butter or ghee to oil the pan
~1+ Cup Fresh Pineapple, cut into small pieces and sauteed?
Fresh Ground Black Pepper to taste
An 8" non-stick skillet works well for these.

In a medium bowl, quickly fork together eggs and add remaining ingredients to create a fine batter. Over medium heat, melt a little butter in the skillet to help prevent sticking. For each crepe, add ~1/4 Cup batter to pan and quickly swirl it around to form a thin crepe. It is best not to let too much remain in the center. Cooking happens quickly, adapt as needed. In less than a minute, when crepe appears dry, flip and cook the other side, likely ever so briefly. Continue in this manner until all are made and kept warm aside. Fill and roll Crepes with Pineapple and Pepper. Or, filling of your choice. Serve hot.
